Apple Cake Bars


These are delicious Apple Cake Bars with chunks of apple, walnuts and  - my personal favorite - frosting. The choice of oil is important because it alters the flavor. Use either something neutral or try one of the buttery raps oils that are available. It will taste like there is butter in the recipe. The choice of apples is also important. Sour apples like Granny Smith or Boskop give a contrast to the sweetness of the frosting while mellow or sweet flavored apples like Jonasgold or Pink Lady enhance the sweetness and warmth. Try out different varieties or even combine varieties in the same cake.


Servings: makes 1 9x13 pan
Duration: about 45 minutes
Utensils: 9x13 pan, whisk
Oven temperature: 350 degrees



2 cups flour

1 1/4 cup sugar

1 teas baking soda

1 teas ground cinnamon

1/4 teas salt

1 cup canola oil

1/4 cup water

1 Tab vanilla extract

1 teas apple cider vinegar

1/3 cup chopped walnuts

3 medium apples, peeled and chopped

1 cup powdered sugar

2 Tab soy, almond or rice milk



Preheat the oven to 350 degrees, lightly grease a 9x13 pan

Mix dry ingredients in a bowl. In a separate bowl whisk the oil, water, vanilla and vinegar. Pour the wet ingredients into the dry and mix until just combined. Fold in apples and walnuts. Batter will be very thick. Pour into prepared pan and spread out. Bake 20 to 25 minutes until the center is set and the top is lightly brown.


Whisk together powdered sugar and milk and spread over cake while still warm. Let cool and cut into squares.

I had to add extra flour to the recipe, the flour in Germany is more finely ground than in the States and I doubled the frosting ingredients because I like a thicker frosting. The cake tasted great and didn't last two days in my house!
