Fresh plums are a great part of the area of Germany where I live. There is a plum tree across the road. I usually get my plums out of the grocery store or from the weekly market though. I had some left over from making German Plum Cake and thought I would try an old fashioned Plum Cobbler. It was a great hit!
Duration: about 45 minutes
Utensils: 2 quart casserole
Cooking surface: oven
Oven Temperature: 350 / 175 degrees
3/4 cup sugar
10 fresh plums, sliced and seeded - about 4 cups
1/4 teaspoon ground cinnamon
1 cup flour
2 Tab sugar
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 walnuts, chopped
1/4 cup (50 g) vegan margarine
1/4 cup (60 mL) rice milk
1 egg replacement
Preheat oven to 350 /175
In a large bowl, combine white sugar, plums and cinnamon. Place the fruit mixture in a 2-quart casserole.
In a medium bowl, combine dry ingredients and walnuts. Cut the butter in with a fork or pastry blender until the mixture resembles coarse crumbs. Stir in the milk and egg until just moistened.
Drop batter on fruit, or if desired, spread batter evenly. Bake in a 350°F oven for 35 minutes.
Serve with whipped cream or ice cream (optional).
