Cajun Breaded Tofu
I still remember my first trip to New Orleans, the beignets, the blackened tuna fish. Naturally tuna is no longer on the menu, (actually because of the over fishing issue, I have hardly eaten any tuna in years) but this Cajun Breaded Tofu recipe brings to mind those great flavors and gives tofu a new kick. You can use a cajun spice mix or something like Blackened Tuna or mix it yourself. The lime juice also adds a certain something extra to the flavor but lemon juice would work as well. I combined it with Jalapeno Hush Puppies and Easy Coleslaw and had a great southern meal.

Tip:
I prefer to fry these but you can also bake them on a greased backing pan in a 375 degree oven for 8-10 minutes on each side.
Ingredients:
2/3 cup soy or rice milk
2 Tab lime juice
1/4 cup flour
1/3 cup cornmeal
1 Tab cajun spice
1 teas onion powder
1/2 teas cayenne
1/2 teas salt
1/2 teas pepper
Block firm tofu, fluid pressed out
4 Tab peanut oil
Instructions:
Combine milk and lime on a wide deep plate. Combine flour, cornmeal and spices together and spread them out onto a seperate wide deep plate. Heat the oil. Slice the tofu into 4 thick slices. Dip into milk mixture and then coat with flour mixture. Fry in oil a few minutes on each side until the crust is a golden brown. Serve immediately with side dishes like Jalapeno Hush Puppies and Easy Coleslaw.
Breading anything has never gone so well for me until I learned the secret of breading is the bread crumbs! That is why I use panko bread crumbs. They have an even consistency that makes everything stick better and the result looks really professional. You find them in better grocery stores or asian markets.
