Eggless Pancakes

Here is my niece Anna's recipe for Eggless Pancakes. Anna is allergic to eggs but doesn't want to give up all the great foods that you make with eggs! She shared this recipe with me and they are light and just like "normal" pancakes. I think the hint of cinnamon makes a great addition to the taste. I haven'T tried it yet but you could try mixing in fresh fruit, but increase the flour a little or reduce the milk to compensate for the extra fluid. Great Sunday Brunch food!

 

Servings: about 4
Duration: 20 minutes
Utensils: mixing bowl, frying pan
Cooking surface: stove top


Ingredients:

1 cup flour

Pinch salt

1 tsp sugar

2 heaping tsp baking powder

Pinch cinnamon

1 tbsp olive oil

1 tbsp vegan margarine melted

1 cup oat or almond milk

1/2 tsp vanilla

 

Instructions:

Mix all. Let sit 5 min. Batter will be slightly lumpy. Heat pan on low/medium. Ladle batter onto pan. Cook until bubbles form and pop. Flip. Cook 30 more seconds. Serve immediately.

 

One of my best loved memories is of my Dad making us giant pancakes in the morning before we sent to school. Each pancake filled the pan and he could still flip them without breaking them, something I have never been able to recreate. It was a big deal that he got up with us because he worked the night shift and that meant he had only had a couple hours of sleep. We even somethings had pancakes for an evening meal. I guess my family was pancake crazy! That's one of the reasons pancakes are still so special to me.
