Easy Coleslaw

Not being able to mayonnaise did concern me when I decided to start to eat vegan. I didn't even think that there could be a vegan recipe that could taste better than store bought to me and be so easy to make. By adding a little sugar to it I made a kind of salad dressing that reminds me of Miracle Whip but is probably healthier without the thickening agents.

 

Servings: 4-6
Duration: about 15 minutes
Utensils: shredder or food processor, hand blender or blender


Tip:

I like to shred my carrots the old fashioned way with a knuckle buster but a food processor would be faster. As you can see from the photo, I cut my cabbage rather than shred it.

Ingredients:

Small head of cabbage, shredded or diced

2-3 medium sized carrots, grated

Eggless Mayonnaise

1 Tab sugar

 

Instructions:

Mix carrots and cabbage in a bowl with the mayonnaise and the sugar. Chill before serving.

 

Try this with Cajun Breaded Tofu and Jalapeno Hush Puppies for a great Southern style meal.
