Curried Sweet Potato Fries

This Curried Sweet Potato Fries recipe is part of my conversion to seeing sweet potatos as multifunctional! I used to think that there was only one recipe for sweet potatos and that is baked with marshmallows on top! That's how it was always served at my grandmother's and at my mother's house. Some people find that recipe way too sweet but it always reminds me of home. There are in fact lots of ways to prepare them that won't give you diabetes, this being just one. Sweet potatos used to be impossible to find in Germany - in a can or fresh. Now they are available practically year round. Who knows where they come from in the middle of winter!

 

Servings: 2-3
Duration: 40 minutes
Utensils: baking sheet, pastry brush (optional)
Cooking surface: oven, 400 degrees


TIP:

Leaving the skin on makes the fries more like cottage fries. It works well to use freshly cracked sea salt. Because the grains are larger, they hold well to the fries. 

 

Ingredients:

one large sweet potato

olive oil

curry spice 

Salt and Pepper

 

Instructions:

Preheat the oven at 400 degrees. Cut the sweet potato into french fry like strips. Spread on a cookie sheet.  Sprinkle with olive oil and spices. Bake in oven 25 - 35 minutes. Serve immediately.

This Curried Sweet Potato fries are really simple and so deliscious you could make a meal of them! As a sidedish, they would go really well with the Cajun Spiced Tofu! You could also try them without curry if you prefer to have them less spicy.

This looks so delicious! Bread, ptaotoes, what's not to like! Add some cheese and you have my three major food groups, lol! And since I can't seem to get my Aloo Chop to come out right, this might be a good alternative.
