Soups and Stews are comfort food for me. I love the mix of flavors and textures. Chili, lentil, leek or even cold like Gaspacho or Cucumber give a wonderful comforting feeling. There are soup recipes in most cultures, which underscores my idea that they supply a real need.
Being able to experiment is also one of the great things about soup. You can combine a broad range of flavors and textures. The lightness of coconut milk or the thickness of beans. You can add noodles, rice, potatoes or just veggies. Cream it, leave it chunky or only partly chunky. Spicy, aromatic, or let the vegetable flavors come through. Use your imagination and maybe empty out your refrigerator and you have a soup!
Soup can be the beginning of a meal or the whole thing. Soup and salad, soup and bread. There are some great little restaurants in Frankfurt, Germany that only serve soup. It is something that you can cook a big pot on Sunday and have lunch for the whole week from it. It can be economical or expensive depending on your ingredients. Pretty much the sky is the limit!
I include stew and chili on this page although some people see them as a different species. For some people I know, chili should have its own page! But in the end the principle is the same to me and so I list them together.
