Potato Soup with Rucola Pesto

Servings: 4
Duration: about 45 minutes
Utensils: large sauce pan, hand blender, blender
Cooking surface: stove top

 

Ingredients:

3 Tab olive oil

2 shallottes, chopped

12 oz potatos, peeled and diced

2 medium sized carrots, chopped

1/2 cup celery root, peeled and diced

1/2 cup parsnip, peeled and diced

1/2 cup butter

4 cups of vegetable broth

1 Bay leaf

Salt and pepper

1 cup soy cream

Vegan Pesto (made with rucola)

 

Instructions:

Heat the olive oil in the pan. Add onions and sauté until clear. Add other vegetables and braise lightly. Add broth and bay leaf and spice. Cook for about 20 minutes. When the vegetables are soft, remove the bay leaf and use the hand mixer to puree until smooth. Stir in soy cream. Serve in bowls Spoon the pesto in a circle on the top and serve.

 

It is a nice touch to add a little decoration. I thinly sliced a potato and fried it in peanut oil until the pieces were golden brown. You could also make potato "straw" by using a spaghetti cutter or a spiral cutter and frying it in oil and garnish the soup.
